This is when Soichi Ohta, founder of the company, and his wife Kinuyo opened a small neighborhood factory. From there this company has blossomed. In 1941, Soichi went on to purchase the Nakano Candy Factory, which he then renamed the Ohta Candy Factory. Then in 1954 he purchased what is now known as Hawaii Candy. This company now has two locations: one on Liliha Street which sells both Senbei and candy and the other on Nuuanu which only sells candy. Regardless of the time or location, preserving the recipes and maintaining the quality of its products has always been a priority for Hawaii Candy. This is why only the finest and the freshest ingredients are used.

1. Bill Gates insisted on serving this chocolate at his wedding

2. The Dalai Lama chose this to be the very first type of chocolate he ever tasted.

3. Emeril Lagasse featured this chocolate on his series ìEmeril Live.”

So, it is no wonder that the New York Times calls Hawaiian Chocolate “the best in the world.”

This company was began in 1986 by Jim Walsh when he set out to create the first variety/vintage chocolate. He followed the California wine industry’s model and matched the selected genetics that he had collected to Hawaii’s environment. As such he tested various types of cocoa trees to see which would be the most compatible with Hawaii’s environment. From these trees he only select a few to breed. In doing so, he created the first new variety of cocoa plant in Hawaii in 80 years.

Today, Hawaiian Vintage Chocolate is a public development company. It creates products, brands and marketing opportunities by utilizing its own unique assets. This company is also a leading developer and innovator whenever it comes to gourmet varietal and functional chocolate. The international news about Hawaiian Vintage Chocolate has educated an enthusiastic audience. Like wine enthusiasts, these chocolate enthusiasts both know and understand that this chocolate’s flavors are a result of its genetics, environment and post-harvest handling.

1. Mango: This is a fruit that varies from round to pear-like in shape and is usually about four to five inches in length.

2. Achee (ackee/akee): This fruit is found on many Caribbean islands. It is important to note though that this fruit must be perfectly ripe in order to be edible. Otherwise, it can be toxic if consumed. Even when it is ripe, only the yellow or whitish portion around the seeds can be safely eaten. Luckily it is easy to know when this fruit is ready to be eaten as the bright red pod will open on its own. With this in mind, you should never force the pod to open.

3. Kiwi: These colorful, sweet-tasting fruits have fuzzy skin. They are actually a type of berry and grows in much the same way as grapes (on a creeper vine). Kiwis have a refreshing taste and they are also highly nutritional.

4. Pawpaw: A pawpaw looks like a fat, brown banana. It has sweet fresh and tastes like custard, even though it is peppered with seeds.

5. Papaya: Papayas are large, pear-shaped, that come in either golden-yellow, orange-yellow or yellow-pink skins. These fruits are juicy with a sweet-tart taste and edible seeds

6. Pineapple: This is a popular summertime fruit that has a quirky, colorful appearance and tangy sweetness.

7. Tangelo: These are yellow-orange citrus fruits that are actually a cross between a tangerine and a pomelo (a relative to the grapefruit). They are the same size as a sweet orange, have a slightly bumpy rind, are very juicy, highly aromatic and great tasting.

Now that you know what these fruits are and what they taste like, you should feel much more comfortable eating them.

This is because they are the ones who created this candy to begin with. This company was started by Mamoru Takitani. In 1927 he purchased Ellen Dye Candies, renaming it Hawaiian Host.

Whenever making their chocolate covered macadamia nuts, Hawaiian Host uses only the highest quality chocolate to cover their premium macadamia nuts. The chocolate uses a special recipe to cover these delicately dry roasted macademia nuts. Therefore, it should come as no surprise to you that they are the number one seller of chocolate covered macadamia nuts in Hawaii.

To begin with the cocoa bean must harvested by hand. Machetes will then be used to cut the bean open so that both the bean and the pulp can be extracted.

Once the bean and pulp is extracted it must go through a fermentation process. This will last between 5 to 6 days. During this time, the natural sugars begin to create alcohol that is drained away and chocolate’s deep brown color begins to appear.

After the fermentation process, the beans must be dried in the sun for two weeks. Hot air will produce a much less desirable result as the chocolate will not be as of such high quality.

This is not the end of the processing though. The cocoa beans must be further processed through a roasting process that is quite similar to that which is used in the creation of coffee. In this process the temperature must reach around 210 degrees for between a few minutes and an hour. Herein chocolate gets its rich flavor. If the temperature is too low during this process, the bean will get a fruity taste to it.

For really bitter beans, a longer roast is required. This is known as winnowing. Herein the cocoa beans are shelled and prepared to go into the grinder, which is another important part of the process. The winnowing process will continue until eventually some very tasty chocolate is created.

As you can see, making chocolate takes a lot of patience and time. This should make your next bite of chocolate all that much more enjoyable.

There are many small manufacturers of superior chocolate products within the United States today. Most of these manufacturer actually use cocoa that has been imported from overseas. In fact, Hawaii is the only island that actually uses cocoa that is grown locally in order to make their fine chocolate products. Hawaii also grows other things, such as macadamia nuts and vanilla, that they also use in manufacturing their chocolate.

In order to grow cocoa, there are some things that are required:
1. The temperature must be between 18 and 32 degrees Celsius. While cocoa can grow when temperatures are above 32 degrees Celsius shade covering is necessary.
2. The rainfall must be between 1,250 to 3,000 mm per year. This rainfall must be well distributed and the period between rainfalls must not be any longer than three months. With these conditions, irrigation is rarely used. In fact, information about using arrogation to grow cocoa is very limited.
3. The soil must be 1.5 m in depth, free draining, have good moisture holding capacity and a pH range from 4.5 to 7.0 preferably close to 6.5.
4. There needs to be shade in order to protect the cocoa from wind damage.
5. Cocoa requires a great deal of the proper fertilizer.
6. Weed control is especially important whenever cocoa is first being established. Usually this is done by hand.
7. Pruning is used to limit the cocoa plant’s height to only between 1.5 to 2 m.

It is important to have all of these appropriate conditions. If they are had then it is fine to begin by raising seedlings in a nursery. Seeds are never directly planted in the field because of irrigation and problems with weed and pest management. Once the seeds have been propagated, they can be transferred to the field in about three to six months.

This chocolate company was an immediate hit. Three years later, in 1998 Island Princess acquired a macadamia nut orchard and processing facility. This is a a 1,100-acre orchard and processing facility located on Keaau. Here customers can watch as chocolate is hand-dipped right in front of their eyes. The acquisition made Island Princess one of the few companies in Hawaii that grows, processes, manufactures and distributes macadamia nuts and confections. Today it is one of Hawaiiís top manufacturers of specialty macadamia nut chocolates as it continues to set new standards of excellence that are based on the owners’ strong work ethic, vast energy and dynamic leadership.
